Title: Mixed Raisin-Bran Muffins (Lf)

PER MUFFIN
1 1/4cOat bran;
1cWhole-wheat pastry flour;
1/4cBrown sugar;
1/2cRaisins;
2tsBaking powder;
1/4tsSalt;
1cLow-fat milk;
  Egg; beaten
1/4cMolasses;
2tbVegetable oil;
 xNonstick veg cooking spray; optional

Preheatoven to 425F.

Combine dry ingredients in large bowl. In separate bowl, mix milk, egg, molasses, and oil. Add liquid ingredients to dry, and mix only until dry are moistened (the mixture should be lumpy). Spray muffin tin with cooking spray or line with baking cups. Fill each cup 3/4 full. Bake at 425F for 15 minutes, or until tops are golden brown. Makes 12 muffins. Per Muffin: 192 cals, 25mg chol, 3gm dietary fiber, 3gm fat, 238mg sodium
